You have to know that I’m quite greedy. Winter and greed is not a good match! I might tell you that this is the time of year when I am a little less attentive to my body shape. But with the sun comes motivation, so I searched my healthy and tasty recipes and then I cooked.
- 2 cod fillets
- about a dozen asparagus
- 1 cup of unsalted peanuts
- 1 citrus
- a bit of butter (or a drizzle of olive oil!)
Preheat the oven to 200°C. Then, start by crushing the peanuts.
Peel the asparagus tails so that it is completely tender to the point. Cut the asparagus into lengths of about 2-3 cm.
Place the two cod fillets in an ovenproof dish. Sprinkle with peanuts. Chop the parsley finely and add it to the fillets. Season the fillets with salt and pepper.
At this point in the recipe you will have to make a choice. The “healthy” choice is to add a drizzle of olive oil on the fish. The “little less healthy”choice, which is to place two or three hazelnuts of butter on each of fillets.
Finally, cut thin slices of lemon and arrange them on the fillets, then put the asparagus in the dish, around the fillets (so they will take on a taste with the fish juice). Put the dish in the oven and let it cook for about 20 minutes, but watch regularly in case.
